La raccolta è di tipo scalare e a volte impostata su diverse parcelle dello stesso vigneto. Attendiamo il momento ideale della maturazione fisiologica e tecnologica, seguendo con continui assaggi delle uve l’evoluzione del processo di maturazione. L’obiettivo è portare in cantina le uve solo quando hanno raggiunto quella che secondo noi è la maturazione ideale. THE CELEBRATION OF SANGIOVESE Autumn is the season in which we harvest the grapes. Harvesting is done in phases and sometimes focuses on different plots in the same vineyard. We wait for the perfect moment of physiological and technological ripeness by continually tasting the grapes to test the evolution in their ripeness. The goal is to transport the grapes to the winery only when they have reached what we consider the ideal degree of ripeness.
