Non effettuare la cimatura e piegare il tralcio per produrre foglie nuove ci ha permesso di avere molti vantaggi a livello sanitario . Abbiamo sfogliato e liberato il grappolo, creando quindi un microclima favorevole, senza però perdere superficie fogliare. Se avessimo cimato la superficie fogliare sarebbe diminuita eccessivamente; dunque la fotosintesi, il lavoro della pianta, sarebbe stata inferiore, con il rischio di ottenere uve con maturazione incompleta. One of our fundamental operations is a method called ‘accapannatura’. We do not carry out top pruning but instead bend the canes to produce new leaves, and this has afforded us numerous advantages in terms of the health of the vines. We have removed the foliage around the bunch, fostering a favourable microclimate, but without losing leaf surface. If we had pruned back the leaf canopy, the foliar surface would have decreased too much; photosynthesis, therefore, which is the work of the vine, would have been lower, with the risk of producing grapes with incomplete ripeness. ‘ACCAPANNATURA’ L’ACCAPANNATURA
