San Polo Diario della Vendemmia / Harvest Diary / 2020 3 Ci siamo avvicinati alla fase finale di maturazione, la più importante per una varietà tardiva come il Sangiovese, non sapendo bene cosa aspettarci data la stagione così particolare, ma già nei primi giorni di raccolta siamo rimasti stupiti dalla concentrazione e ricchezza che abbiamo ritrovato: vini che hanno mostrato subito carattere e finezza veramente inaspettati. In cantina le macerazioni sono state tra le più lunghe degli ultimi anni, abbiamo mantenuto il contatto con le bucce anche per più di un mese, condizione che permetterà ai vini del millesimo 2020 di avere un potenziale evolutivo veramente importante. Le annate sono tutte diverse e ognuna ci rimane impressa per le sue peculiarità, ma c’è una cosa che continua a riempirci di meraviglia, annata dopo annata, la capacità della natura di seguire la sua strada nonostante tutto, quest’anno più che mai .
