San Polo Diario della Vendemmia / Harvest Diary / 2020 16 Passeggiamo sulla parte più alta della collina. Il Monte Amiata , imponente e suggestivo, si staglia davanti a noi. Riccardo ci racconta che quest’anno ha sfalciato il sovescio in due momenti . Con il primo passaggio ha lasciato un cotico vivo che potesse proseguire la sua crescita e continuare ad assorbire acqua, mentre la parte recisa ha iniziato a fertilizzare il terreno. Con il secondo passaggio il sovescio è stato completamente interrato, interrompendo così la competizione con la vite e massimizzando l’azione energizzante del suolo. L’impiego di mix vegetali del sovescio accuratamente selezionati è stata una scelta vincente che ci ha portato ad impiegare una combinazione di essenze ad hoc per ogni singola parcella di San Polo . Abbiamo da tempo iniziato a fare ricerca meticolosa su differenti mix vegetali, diventando tra i primi produttori interessati ad introdurre altre specie oltre al comune favino, quali senape, leguminose, brassicacee, graminacee a seconda dell’apporto che si voleva dare al terreno. I vigneti più argillosi come Podernovi tendono ad essere compatti e richiedono dunque una maggiore quantità di brassicacee che, grazie alle loro radici fittonanti, disgregano il terreno. I vigneti più magri e galestrosi, come Vignavecchia, necessitano di maggior nutrimento e quindi abbiamo utilizzato una percentuale maggiore di leguminose come il favino. We walk on the highest part of the hill. The imposing and evocative Monte Amiata stands out in front of us. Riccardo tells us that this year he mowed the green manure in two stages . The first time, he left a layer that could continue growing and absorbing water, while the cut cover crops began to fertilize the soil. In the second stage, the green manure was completely tilled over and buried, thus interrupting competition with the vine and maximizing the energizing action of the soil. The use of green manure has proven a successful strategy , leading us to use an ad hoc combination of cover crops for each single parcel at San Polo . We have long carried out careful and meticulous studies on different plant mixes, becoming one of the first producers interested in introducing other species in addition to the common field bean, such as mustards, legumes, brassicas, and grasses depending on the contribution we want them to make to the soil. More clayey vineyards such as Podernovi tend to be compact, and therefore require a greater quantity of brassicas which, thanks to their taproots, break up the soil. The leaner and more marly vineyards, such as Vignavecchia, require more nutrition and therefore we have used a higher percentage of legumes such as field beans.
