Scegliamo solo i grappoli migliori facendo un primo passaggio dai filari dei vigneti di San Polo. In realtà decideremo soltanto in un secondo momento se il vino prodotto avrà le caratteristiche per diventare una Riserva. A San Polo, infatti, produciamo il Brunello di Montalcino Riserva solo ed esclusivamente nelle annate di grande eccellenza, solitamente valutate con il punteggio massimo di cinque stelle dal Consorzio del Brunello di Montalcino.
