Bottling the wine is a very delicate phase of our work and is the culmination of all of our efforts in the vineyard and cellar, it is a difficult but exciting time that we approach with both a smile and great care. In a certain sense, the wines’ fingerprint is "sealed" and can no longer be manipulated by the expert hand of the winemaker. The wine will begin its last phase of ageing in the bottle, which enhances the characteristics that have already begun to develop. Our bottling is essentially all by hand, however we do have some help from a machine that can cork 1200 bottles an hour. Today we are starting to bottle the Brunello di Montalcino DOCG 2018, which will begin its bottle ageing process of over a year and then be released to the market in 2023.
