Almost there!

Nature offers us clear signals that indicate grapes state of ripeness.
Sangiovese, in fact, has a specific peculiarity that tells us harvest is going to take place soon: the stem of this variety, the closer we get to the moment of perfect ripeness, "lignifies", as can be seen from this photo in which we can see how the color is changing, from green to wood.
Precisely for this reason, Sangiovese is suitable to be vinified with stems which, being completely lignified, do not bring green, bitter or unripe notes in production. In San Polo we are experimenting this tecnique, in recent years, in amphora. Stay tuned!
