It's late January ... time for tastings in the cellar of the future 2019 Brunellos that are finishing up aging in wood. This step is very important for us, it is useful to understand if barrels have played their role, working on the expression of the aromatic profile and on the structural component of the wine. In this crucial moment, tasting our wines allows us to understand how to blend them to compose the masses of 2019 Brunello.
Blending is a process as important as it is delicate and concerns all wines, but for our Brunello di Montalcino even more: in this case the blending is done with wines that come from barrels of different sizes, carefully selected to best respect the characteristics of each vineyard, with the aim of finding, in the final blend, the maximum balance and the best expressive potential.
Once the blending and blending phase has been completed, the wine will be decanted into the cement tank for the deposit of the fine lees. At this point, it is finally ready to be bottled before the end of the summer.
