Today we begin the first racking at San Polo winery: starting with Rubio and continuing with Rosso di Montalcino. The wines are fresh and very expressive ... very promising!

For our Brunellos, on the other hand, it will take a few more weeks: we reserve the long macerations for them, while the extraction is excellent and the concentrations rich.
